英文摘要Nisin was produced with whey, which is a by-product of cheese. The bacteriostatic effect of nisin was investigated at various temperatures, pH and concentrations of zinc. The results showed that nisin was stable at the pH level below 4. The antimicrobial activities of nisin enhanced as the pH level decreased. The temperature had more effect on the antimicrobial activities of nisin at the pH level above 4. The antimicrobial activities of nisin decreased as the pH level rose. The activity of nisin almost lost at alkaline condition. The antibacterial effect of nisin on Gram-positive bacteria such as Staphylococcus aureus was better than that on Gram-negative bacteria such as Xanthomonas campestris. In addition, divalent metal ions had an obvious effect on the bacteriostatic effect of nisin. © 2016 Taylor and Francis Group, London.
