英文摘要	啤酒酵母菌种是啤酒生产的关键。因此选育优良的啤酒酿造酵母菌株是啤酒工业的一项重要任务。本研究采用物理化学诱变和原生质体融合的方法，选育具有低产双乙酰、乙醛和总高级醇等优良特性的啤酒酿造酵母菌株。 啤酒酵母（Saccharomycescerevisiae）XB05经半导体激光诱变，筛选得到一株发酵特性优良的菌株JY2-2。突变株JY2-2的500L发酵罐发酵试验和120t、240t、360t发酵罐生产性试验结果均表明，该菌株具有发酵能力强，双乙酰还原速度快，发酵液中的双乙酰、乙醛和总高级醇的含量较低等特性，且优良特性稳定。该菌株生产的啤酒口感良好，现已投入啤酒酿造生产。 用紫外线和甲基磺酸乙...; Brewer’s yeast strain is the key to the beer brewage production.
