中文摘要采用十二烷基硫酸钠-聚丙烯酰胺凝胶电泳(SDS-PAGE)和免疫印迹(Western blot)方法,分别对淡水鱼(鲤鱼、鲢鱼、鲫鱼)和海水鱼(黄鳍鲷、金鲳)等5种鱼肌肉,鳕鱼丸、鲢鱼丸两种鱼糜制品以及鲮鱼、沙丁鱼、鳗鱼3种鱼罐头中过敏原(小清蛋白)的含量进行了分析.结果显示,应用抗蛙小清蛋白单克隆抗体(PARV-19)可以分别在5种鱼白色肉和红色肉的肌浆蛋白中检测到特异性杂交条带,其分子量大小约为12~14.4 ku,且白色肉中的含量明显高于红色肉.但在5种鱼的肌原纤维蛋白、2种鱼糜制品和3种鱼罐头中,均未检测到小清蛋白.因此得到结论,无论是淡水鱼还是海水鱼,小清蛋白主要存在于白色肉肌浆蛋白中;经过加工的鱼制品中小清蛋白的含量有很大程度的降低.; Fish allergens(parvalbumins) from the skeletal muscle of five species of fish(common carp,silver carp,crucian carp,sea bream and ovate pompano),two surimi products(codfish ball and silver carp ball) and three kinds of canned fish(dace,sardine and eel) were analyzed by SDS-PAGE and Western blot.Specific protein bands were detected by Western blot using anti-frog parvalbumin monoclonal antibody(PARV-19) in sarcoplasmic fractions from white muscle and red muscle.The molecular masses as estimated by SDS-PAGE were between 12 and 14.4 ku of all the five species of fish tested.The content of parvalbumin in white muscle was much higher than that in red muscle.No protein band corresponding to parvalbumin could be detected in myofibrillar proteins,surimi and canned fish.In conclusion,our present results strongly suggested that whether in marine fish or freshwater fish,major allergen parvalbumin mainly exists in the sarcoplasmic fraction of white muscle while its content in red muscle is extremely low.Processing such as washing or high temperature treatment can effectively remove parvalbumin or destroy its allergenicity.; 【作者单位】福建省高校水产科学技术与食品安全重点实验室,集美大学生物工程学院; 上海海洋大学食品学院;【作者英文名】WANG Ning1,2,WANG Xi-chang2,CAI Qiu-feng1,2,LIU Guang-ming1,CAO Min-jie1*(1.The Key Laboratory of Science and Technology for Aquaculture and Food Safety,School of Biotechnology,Jimei University,Xiamen 361021,China;2.College of Food Science & Technolo
